The Tokaj area boasts a micro-climate and soil conditions which are unique in the world, and which are especially favourable for the making of aszú wine. The traditions of aszú wine-making and the production of natural noble sweet wines and quality dry white wines date back to the 16th century. Tokaji aszú wine is a speciality made from grapes grown in the Tokaj Wine Region which are allowed to develop “noble rot” (the Botrytis cinerea mould).
During the harvest, grapes are individually picked and soaked in high-quality, freshly-pressed grape juice (must), fermenting grape juice and wine of the same vintage from the Tokaj Wine Region. The original meaning of the Hungarian word aszú is “dried”, but the term has come to be associated with wine made with “nobly rotten” grapes. After fermentation, aszú wine is matured in oak barrels kept in cellars hewn into rock hillsides to ensure a constant temperature.

Magyarországi Tokaji bor vidéken előállíto Tokaji aszú
Tokaj a világon egyedülálló mikroklímával és talajadottságokkal rendelkezik, ami kimondottan kedvez az aszúképződésnek. A Tokaji borvidéken a XVI. századra visszanyúló hagyománya van az aszúborok, a természetes nemes édes borok, valamint a magas minőségű száraz fehérborok készítésének.
A „Tokaji aszú” borkülönlegesség a borvidék területén termett, a Botrytis cinerea hatására tőkén aszúsodott és szüretkor szemenként kézzel külön szedett aszúszemeknek a Tokaji borvidékről származó magas minőségű musttal, erjedő musttal, azonos évjáratú borral történő áztatása révén keletkezik. Alkoholos erjedés után állandó hőmérsékletű sziklába vájt pincékben tölgyfa hordókban érlelődik, nemesedik.
Tokaj – ez nem puszta szó, Tokaji – nem bor csupán: áldás az, és áldható
